CURRY LEAF RICE

Curry Leaf Rice is flavorful, delicious and simple to prepare. Curry leaves are known rich source of iron which help to improve low hemoglobin levels due to iron deficiency. It also aids in digestion.

INGREDIENTS:

 

  • Cooked rice                        500g
  • Stock cubes                        2
  • Curry leaves                      1/12 cup
  • Green gram                       1tbsp
  • Grated coconut                 2tbsp
  • Chopped onion                 1no
  • Chopped garlic                 1 clove
  • Sliced green chili             2nos
  • Pandon leaves                  1pc
  • Margarine                         2tbsp
  • Salt to taste

METHOD:

  1. Fry curry leaves, green gram and coconut till crisp. Grind the mix into a powder and keep aside.
  2. Melt margarine in a pan and sauté onion, garlic, green chili and pandon leaves till fragrant.
  3. Add the powder, stock cube and cooked rice and mix it well. Season to taste and serve hot.
